Spicy veggie soup
Ingredients
1¾ lbs. of ground lean meat, such as Turkey.*
1 tsp olive oil
1 large onion peeled and chopped
1 large green, yellow or red pepper chopped.
2 large yellow squash (summer squash) chopped
8 oz mushrooms chopped
2 tsp chopped garlic
2 can of pinto beans.
2 can crushed tomatoes
1 Tbs fresh lime juice
1 Tbs ground cumin
¼ c. of each cilantro and parsley chopped.
2 cups of Uncle Bob’s Mild (16 oz bottle)
6 to 8 cups of water depending on how spicy you like it.
Method
1. Brown the meat in olive oil.
2. Add all other ingredients, cover and bring to a boil.
3. Reduce heat to simmer for one hour.
4. Enjoy the goodness.
*Omit meat for a vegetarian variation.Original Uncle Bob's family recipe.
